Crunchy Almond Biscuits’ recipe by Delices and Gourmandises
The almond biscuits from Delices and Gourmandises are made with fresh eggs and chopped almonds. They are really thin and light, and also crunchy; they are simply delicious. The ingredients to make three dozen biscuits
– 225g (1 1/2 cups) self-rising flour
– 115g (1/2 cup) caster sugar
– 60g blanched almonds, finely chopped
– 1 to 3 drops almond extract
– 125g butter, cubed
– Melted butter, to grease
– 1 egg, at room temperature, lightly whisked
– 1 teaspoon vanilla essence
– 1 pinch salt
How to prepare your almond biscuits?
You can begin by heating the oven to 180°C (Gas 4). Then grease two baking trays with melted butter.
In a bowl, mix the flour, caster sugar and salt. Set aside.
In a saucepan, melt butter over low heat until it foams. Then, let it cool slightly for 5 minutes, and add the mixture made before, the almonds and extract, egg and vanilla essence; so, stir until brought as a dough.
Using your hands, mould heaped tablespoonsful of mixture into balls, and flat them to 1cm thick with a fork. Garnish the top of each biscuit with blanched almond if desired.
Place the biscuits on trays about 3 cm apart, so that they can spread.
Bake for 15 minutes, or until light golden. Halfway through cooking, it is recommended to swap trays.
